The calorie figure on a package is a calculation rather than a measurement of that food. Knowing how it is produced explains both why it is useful and where it systematically misses.

The number comes from a formula

Manufacturers determine the protein, fat, carbohydrate, fibre and alcohol content of a product, then multiply each by an agreed energy value per gram and add the results together.

Those energy factors are averages established long ago by burning foods in a calorimeter and adjusting for the portion typically lost in digestion and excretion.

The figure printed is therefore an estimate of average available energy across people and preparations, not a property of the specific item in the packet.

Digestion extracts different amounts from different forms

Whole nuts pass through the digestive tract with part of their fat still trapped inside intact cell walls, so less energy is absorbed than the composition implies.

Grinding, cooking or processing the same food breaks those structures down and raises the proportion actually absorbed, without changing anything a label would report.

The same applies to starch, where cooking and cooling alter how much resists digestion, which is why food form matters in ways the printed figure cannot capture.

Digestion itself consumes energy

Processing food has an energetic cost, and that cost differs by nutrient: protein requires substantially more energy to digest and metabolise than fat or carbohydrate.

Two meals with identical label totals can therefore deliver different net amounts depending on their composition, though the difference is modest rather than transformative.

This is one reason why comparisons between diets with the same calorie total sometimes show small differences that were not expected from the arithmetic alone.

Tolerances are wider than the precision suggests

Regulations permit a margin of error between the declared value and the measured content, because natural products vary between batches and seasons.

Portion sizes are also defined by the manufacturer, and a package that appears to be one serving frequently contains more than one according to the label.

A figure quoted to the nearest calorie therefore carries an implied precision that the underlying method does not support.

What the figure is still good for

Despite these limits, label calories are consistent enough to compare similar products against each other, which is what most people are actually doing when they read them.

They are far less reliable as an absolute account of energy intake, and treating a daily total as an exact quantity builds precision that the inputs never had.

Where energy intake needs to be managed for a medical reason, that is work for a dietitian who can account for the individual situation rather than for arithmetic alone.
